Dave Ellefson's Star Cookies and No-Bake Cookies

From Megachef to Megadeth with Dave Ellefson’s Festive Cookies!

Here’s a some home-baking with Megadeth’s Dave Ellefson, as he gets a little festive making his Star Cookies and his No-Bake Cookies.

“Ever since I was a kid I always look forward to two things: cookies and Christmas. So it’s no surprise that my culinary skills always lead me back to baking, especially when the holiday season rolls around. Both of these cookie recipes work great during the holidays, especially if you can take a vacation from your rock star low-carb diet for a few days. I recommend serving these with a strong cup of Starbucks Caffe Verona or French-pressed French Roast blend. They will work well with your favorite ’nog, too. The caffeine and sugar are a surefire way to get the creative juices flowing as you ring out the old year and start rockin’ in the New Year. Don’t forget the mistletoe and enjoy!” Dave Ellefson, Megadeth.

*1/2 pound butter
*1 cup of raw sugar
*1 cup of brown sugar
*1 cup of peanut butter
*1 teaspoon of salt
*2 large eggs
*2 teaspoons of baking soda
*2 teaspoons of vanilla extract
*3 cups all-purpose flour
*Granulated white sugar, for rolling
*Brach’s Chocolate Stars (or similar)

Makes 6 to 7 dozen cookies

*4 tablespoons butter
*1/2 cup of milk
*2 cups of sugar
*3 tablespoons of unsweetened cocoa
*1/2 cup of peanut butter
*2 cups oatmeal

Makes 5 to 6 dozen cookies

So Here's What To Do

Preheat the oven to 180°C/350°F.

Cream together the butter, sugars, and peanut butter. Stir in the salt, eggs, baking soda, vanilla, and flour. Form the mixture into small balls and roll lightly in white sugar. Place each ball on a baking sheet, about 1 inch apart, and bake for 8 minutes.
Remove from the oven and place a Brach’s chocolate star (or similar) on each cookie. Place back in the oven for no more than 2 minutes, to slightly melt the stars onto the cookies. Remove from the oven, place on a cooling rack, and serve warm and gooey. Delicious!

Combine the butter, milk, sugar, and cocoa in a saucepan. Bring to a boil and cook for 2 minutes. Remove from the heat and stir in the peanut butter and oatmeal. Drop tablespoon-size lumps of mixture onto wax paper and let cool. Ready to eat within minutes!
What’s great about these cookies is that they don’t require any baking. So even if you have a tendency to burn water while cooking, you at least have a shot at doing these up right.
