MegaGuacamole and Nachos

MegaGuacamole is essentially normal guacamole but is all revved up with some extra ingredients making it Mega!

  • 1 avocado – nice and large and RIPE!
  • 1 large shallot or a small onion
  • 6 cherry tomatoes or 2 small tomatoes – again, nice and RIPE!
  • 1 level dessert spoon of crème fraiche
  • A handful of chopped coriander
  • The juice of a quarter of lemon
  • 1 good size garlic clove, peeled and finely chopped
  • ½ a red chilli, finely chopped
  • A pinch of dried chillis
  • ½ teaspoon of paprika
  • salt and pepper

So Here's What To Do

Scoop out the avocado and mash with the back of a spoon in a bowl. Add a little squeeze of lemon juice to stop it browning. Mix in a level dessert spoon of crème fraiche, this makes the avocado go further and softens the mixture.

Finely chop the shallot (small onion) and chilli, quarter the cherry tomatoes (or chop the small tomatoes) and add to the avocado mix.

Add the paprika, dried chillies and the rest of the lemon juice. Season with salt and a twist of pepper and add half the chopped coriander. Mix together.

You can add as much chilli and lemon juice as you like. I like my guacamole to have some piquancy, but not too much heat or you loose the subtle flavour of the avocado.

Garnish with the remaining chopped coriander.

Chilli Con Carne!
