Perfect Rice

For perfect fluffy rice every time!

  • 1 tablespoon of sunflower Oil
  • 200ml of Basmati Rice
  • 400ml of boiling water
  • ½ teaspoon of salt
  • A clean tea-towel

So Here's What To Do

Heat a tablespoon of sunflower oil in a good size pan, nice and hot. Add the rice and stir in the oil. Then add the boiling water (it should make a bubbly noise if your pan is hot enough), add the salt, stir in, cover and lower the heat to simmer-mode for 15 minutes – do NOT remove the lid or stir in this time. After 15 miuntes, remove from the hob, remove the lid, don’t stir it or anything and cover with the tea-towel for 10 minutes – how easy is that!

Onion Rice

To make onion rice, which is a nice touch from Delia, just add the finely chopped onion to the oil firstly and soften for about 1 or 2 minutes and carry on as above.

You can also add some turmeric to either rice style for colour, if you think it will enhance the image of your dish but for example, it won’t look so good with the MegaChingri Malai Curry as this dish looks better with a clean white rice.


Only if required:

  • 1 small onion finely chopped
  • ½ teaspoon of turmeric (just for colour really)
